About the book

In creating this book, we gathered together everyone’s favourite baking recipes, removed any excess sugar, and adjusted the remaining ingredients so that the recipes still work and the finished products taste delicious.

Our practical recipes use ingredients that are readily available at the local supermarket.

We have the tested the recipes, our friends and family have tested the recipes, and we know they all work well and taste great.

The book is designed to be clear and easy to use. Each recipe comes with a large colour photo and plenty of space for you to write your own notes. At the beginning of each recipe there are three icons – one shows the baking method, one shows how many teaspoons of sugar in a single serving, and the last (oven) icon has an space for you to record your own baking time if you want to (since every oven cooks a little differently). The book includes baking methods and tips, information on sugar and a comprehensive index.

Frequently Asked Questions         

Why can’t I just make my normal recipe and take some of the sugar out?

We started off doing this, but found that it didn’t work very well – so we decided to take a scientific approach. We experimented with how much sugar we could remove, as well as which ingredients we needed to adjust or add to make the recipes still taste great and work well.

Have you replaced white sugar with unrefined sugars like honey, dates and coconut sugar?

No. These alternatives are still sugar. They contain high levels of the same building blocks – fructose and glucose – found in white sugar. While unrefined sugars often contain more nutrients than traditional white sugar, they are not present in sufficiently high levels to make a significant difference to your diet.

Sugar adds texture to baking, which is why it is the best option in most recipes. However, we do have recipes listed in the index that use only unrefined sugars, for example, our muesli bar made with brown rice malt syrup.

What about artificial sweeteners? 

Artificial sweeteners do not contribute to texture – which is so important in baking. They are also particularly sweet, thus maintaining your sugar cravings and desire for very sweet products.

Yes, we have 15 gluten-free recipes. We also explain how to make the majority of our recipes dairy-free.
